There's a bunch of process-related interactives on there, but it's ad-intensive and you have to register if you want to make your own or add to anyone else's.

The Unending BE Addventure
An ENORMOUS amount of chapters, but searching for ones that suit your particular interests can be difficult.

It's easier to navigate than the BE addventure, and has better quality writing than CYOC.

Thanks for this one. I had lost the link somehow. After it was attacked with spam bigtime for a short while, I gave up on it. Then I found it again, and it was spam free. Then I reorganized my links and somehow lost this. So again, thanks.

Unending BE is my favorite, even if it's a nightmare to navigate. There is one story arch I prefer there above all the others I've seen. It's the one with the Alicia and the Automorph.
