That was the biggest part of the movie that bothered me. (strangely enough)
Sure, suspension of disbelief got me past the na'vi, their weird brain ports, floating rocks (low gravity is mentioned along with whatever weirdness is in that spot)
but.. Where does the water in those floating rocks come from? They're just pouring water all day long from *where*? The mist around them cant provide that much moisture.
