Maybe it's because of how famously horrific the transformation in Pinocchio was that they've been avoiding doing them that way ever since. Disney's not really in the business of making kids piss themselves with fear. They probably have a quality control system in place to monitor how freakishly horrifying a transformation can be; which could explain how they're mostly 'poofs' or off screen these days. The TF in Brave for example, in the concept art it was shown to actually have on screen process, but in the final release it all happened under a blanket.

^Indeed; apparently, the age progression scene at the end of the film was toned down for the final cut, to avoid dwelling on it and upsetting children.
