As for "if they will anything with it?" The following is a major spoiler if you're planning to watch, but....boy-howdy do they ever.

Right after this, when she's down to about 2 inches tall, she returns to the guy she was hoping to have sex with and climbs his dick like a pole and hugs it to try and jerk him off. That's not implied, they show it on-screen.

She has to eat to grow and stay that size. I think her being tiny is her actual height so she's made to eat so she is big and can pass as 'normal'

I've seen some debate on that and I think it could be that her "power" is some kind of metabolic condition in which not getting enough nutrition or digestion saps her height. In ep2? Emma got depressed and was half passed out in her room when Marie found - I think she was like and inch or less high (it was hard to see). Next scene Emma is human sized eating a snack bar and Marie commented that Emma had gotten dangerously small. I think it might mean that Emma theoretically doesn't have a stopping point in shrinking, but it would put her life at risk to go that far.

It's totally possible I put more thought into this the writers ultimately did, but the attention to details so far has been fascinating so who knows how crazy this could really get.

Yeah I'm not interested in watching the series. Though this discussion is quite interesting.

It would be quite a bit sexier if she didn't have to purge to shrink, but I guess we'll take what we can get.

Pretty sure it's a heavy-handed metaphor for eating disorders.
