Four of my favorites are The Jungle Book, Help! I'm Trapped In My Sister's Body, Charlie and The Chocolate Factory, and James and The Giant Peach.

For me, it's Babbit by Sinclair Lewis. It really made me think. It even made me cry at the end, a feat which no book had previously accomplished, or has since.

Set in the present day, Holes by Louis Sachar has what may be the most intricate plot I have ever encountered in any medium. It also has a dark sense of humor. And it's technically a children's book.

As for epic fantasy adventure, it's hard to beat Ursula K. Le Guin's A Wizard of Earthsea. It's got four sequels, but none of them recapture the appeal of the original story. The first, though, is most definitely worth your time.

well, holes IS pretty much a children's book. the plot is similar to a good law and order episode. which is a good way to get kids to like law and order later in life.
